Loaded Loaded Potato Mac is a delectable fusion of creamy macaroni and cheese combined with the rich flavors of loaded baked potatoes, featuring crispy bacon, tangy sour cream, and fresh green onions. Perfect for family gatherings or cozy nights in!
Ingredients
2 cups elbow macaroni or any small pasta
2 large Russet or Yukon Gold potatoes, peeled and diced
2 cups shredded cheddar cheese
8 oz cream cheese
6 slices bacon, cooked and crumbled
4 green onions, thinly sliced
Sour cream (optional), for serving
Instructions
1. Peel and dice potatoes. Boil in salted water until fork-tender, 15–20 minutes. Drain and mash until smooth.
2. Boil macaroni until al dente (8–10 minutes). Drain and set aside.
3. In a large mixing bowl, combine mashed potatoes, cooked pasta, cheddar cheese, cream cheese, crumbled bacon, and green onions. Stir well.
4. Preheat oven to 375°F (190°C). Transfer mixture to a greased 9×13″ baking dish.
5. Bake for 25–30 minutes until top is golden and cheese bubbly.
6. Cool slightly, then garnish with green onions, sour cream, or paprika. Serve hot.
Notes
For a creamier texture, add a splash of heavy cream or half-and-half.
Try Gouda or Gruyère for a different cheese profile.
Store leftovers in fridge up to 4 days. Reheat in microwave or oven.
