Loaded Taco Pasta Bake: A Flavor-Packed, Cheesy Delight. This easy-to-make casserole combines savory ground beef, bold taco seasonings, and hearty pasta, all smothered in a melty blend of gooey cheeses.
Ingredients
- 3 cup pasta
- 1 pound ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup corn kernels
- 1 can (15 ounce) black beans, drained and rinsed
- 1 can (14.5 ounce) diced tomatoes with green chilies
- 1 packet taco seasoning
- Salt and pepper, to taste
- 2 cup shredded Mexican blend cheese
- 1 cup salsa
- Fresh cilantro or green onions, chopped for garnish
Instructions
1. Preheat your oven to 375°F and grease a 9×13-inch baking dish.
2. Cook the pasta according to the package instructions until al dente. Drain and set aside.
3. In a large skillet over medium heat, sauté the diced onion and minced garlic until softened. Add the ground beef and cook until browned. Drain excess fat.
4. Stir in the corn, black beans, diced tomatoes, and taco seasoning. Simmer for 2-3 minutes.
5. In a large bowl, combine the cooked pasta, beef mixture, salsa, and 1 cup of cheese. Season with salt and pepper. Transfer to the baking dish and top with remaining cheese.
6. Bake for 15-20 minutes until cheese is melted and bubbly.
7. Garnish with fresh cilantro or green onions and serve warm.
