Description

This Mac and Cheese-Stuffed Meatloaf takes comfort food to the next level with creamy, cheesy mac and cheese tucked inside a savory, juicy meatloaf. A delicious twist on two classics!

Ingredients

Scale

For the Meatloaf:

  • 2 lbs ground beef

  • 1 cup breadcrumbs

  • 1 egg

  • ½ cup milk

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ cup BBQ sauce

For the Mac ‘n’ Cheese Filling:

  • 1 cup elbow macaroni, cooked

  • 1 cup shredded cheddar cheese

  • ½ cup heavy cream

  • ½ tsp garlic powder

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C).

  • Prepare the Meatloaf Mixture: In a large bowl, combine ground beef, breadcrumbs, egg, milk, salt, pepper, garlic powder, and onion powder. Mix until well combined.

  • Make the Mac and Cheese Filling: In another bowl, stir together the cooked macaroni, shredded cheddar cheese, heavy cream, and garlic powder.

  • Shape the Meatloaf: On a baking sheet or greased baking dish, form half of the meat mixture into a loaf shape. Create a hollow space in the center to hold the mac and cheese filling.

  • Stuff with Mac and Cheese: Spoon the mac and cheese filling into the hollow of the meatloaf.

  • Top with Remaining Meat Mixture: Cover the filling with the remaining meat mixture and seal the edges.

  • Brush with BBQ Sauce: Brush the top of the meatloaf with BBQ sauce.

  • Bake: Bake the meatloaf in the oven for 50-55 minutes until the internal temperature reaches 160°F (71°C).

  • Rest and Slice: Let the meatloaf rest for 10 minutes before slicing. Serve and enjoy!

Notes

  • Feel free to experiment with different cheeses for the mac and cheese filling, such as Monterey Jack or mozzarella, for a unique twist.

  • For a healthier option, you can use lean ground turkey instead of ground beef.

  • The mac and cheese filling can be made ahead of time and stored in the fridge for up to 2 days.
