Instructions

1. In a bowl, combine the ground chicken, Parmesan, garlic, onion, breadcrumbs, parsley, Italian seasoning, salt, and pepper. Mix until the ingredients are just combined, being careful not to overwork the mixture.

2. Roll the meatball mixture into 1-inch balls, creating a uniform size for even cooking.

3. Heat a bit of olive oil in a skillet over medium heat. Brown the meatballs on all sides until they’re golden in color, but don’t worry about cooking them all the way through just yet. Remove the meatballs from the pan and set them aside.
