Ingredients
- 1 pound boneless, skinless chicken thighs or breasts

- 2 cup cooked white or brown rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced

- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup feta cheese, crumbled
- 1 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 tablespoon fresh dill, chopped

Instructions
1. Marinate the chicken by combining olive oil, lemon juice, garlic, oregano, salt, and pepper. Let it sit for at least 30 minutes.
2. Preheat grill or skillet over medium heat. Cook chicken for 6-7 minutes per side until fully cooked through.
