Ingredients
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 medium zucchinis, sliced into half-moons
- 1 cup cherry tomatoes, halved
- ½ red onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- ½ cup shredded mozzarella cheese (or feta)
- ¼ cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish with nonstick cooking spray or olive oil.
2. In a large bowl, combine the cubed chicken, sliced zucchini, halved cherry tomatoes, thinly sliced red onion, and minced garlic. Drizzle with the olive oil and sprinkle in the dried oregano, basil, smoked paprika, salt, and black pepper. Toss everything together until the ingredients are evenly coated.
3. Spread the seasoned chicken and vegetable mixture evenly in the prepared baking dish.
4. Place the baking dish in the preheated oven and bake for 25-30 minutes, stirring halfway through, until the chicken is cooked through and the vegetables are tender.
5. Remove the dish from the oven and sprinkle the shredded mozzarella and grated Parmesan cheese over the top. Return the dish to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
6. Garnish the Mediterranean Chicken Zucchini Bake with the chopped fresh parsley and serve the dish warm, either on its own or with your choice of side dishes.
