Ingredients
- 1 lb lean ground chicken
- 3 cloves fresh garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/2 cup plain breadcrumbs
- 2 large eggs
- 1 small onion, finely chopped
- 1/4 cup ketchup (for topping)
- Salt and pepper to taste
Instructions
1. Preheat your oven to 375°F (190°C) and prepare a loaf pan.
2. In a large mixing bowl, combine ground chicken, minced garlic, grated Parmesan, breadcrumbs, eggs, chopped onion, salt, and pepper.
3. Mix gently until just combined, avoiding overmixing.
4. Transfer the mixture to the loaf pan and shape it into a loaf.
5. Spread ketchup over the top of the meatloaf.
6. Bake in the oven for 45-50 minutes until the internal temperature reaches 165°F (74°C).
7. Halfway through baking, check the meatloaf and tent with foil if browning too quickly.
8. Let the meatloaf rest for 5-10 minutes before slicing.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
To reheat, place slices in the oven at 350°F (175°C) for 10-15 minutes or microwave individual portions.
