Ingredients

  • 4 boneless, skinless chicken breasts (approx. 6 oz each)

  • 1 cup fresh spinach leaves (packed)

  • 1 cup roasted red peppers, thinly sliced

  • 1 cup mozzarella cheese, shredded or sliced

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon Italian seasoning (a blend of oregano, basil, thyme, etc.)

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • Toothpicks (to secure the stuffed chicken)


Instructions

  • Preheat & Prepare: Preheat your oven to 375°F (190°C). Cut a pocket into each chicken breast, being careful not to slice all the way through.

  • Season & Stuff: Season the chicken with garlic powder, onion powder, Italian seasoning, salt, and pepper. Stuff each pocket with spinach, roasted red peppers, and mozzarella cheese. Secure with toothpicks.

  • Sear the Chicken: Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until golden brown.

  • Bake to Perfection: Transfer the seared chicken to a baking dish and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
