- 3–4 boneless, skinless chicken breasts
- 8 oz fresh mushrooms (cremini or button), sliced
- 3 cloves garlic, minced
- 1 cup heavy cream (or half-and-half)
- 2 tbsp low-sodium soy sauce
- 1 tsp dried thyme
- Olive oil, salt, and pepper
Instructions
1. Season the chicken breasts with salt and pepper.
2. Heat a skillet over medium-high heat and add olive oil.
3. Sear the chicken for 4-5 minutes per side.
4. Remove the chicken and sauté sliced mushrooms until tender.
5. Add minced garlic and cook for 1 minute.
6. Pour in heavy cream, soy sauce, and thyme; simmer for 3-4 minutes.
7. Return chicken to the skillet and simmer covered for 7-10 minutes.
Notes
For dairy-free, use coconut milk instead of heavy cream.
Pair with mashed potatoes, rice, or pasta.
