Ingredients
- 1 pound ground beef
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 1/2 cup uncooked short pasta (rotini or penne)
- 1 can (14.5 ounce) diced tomatoes, undrained
- 1 cup beef broth
- 1/4 cup ketchup
- 2 tablespoon yellow mustard
- 1 tablespoon tomato paste
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 32 ounce frozen tater tots
Instructions
1. Preheat your oven to 400°F.
2. Cook the ground beef over medium heat for 5-7 minutes, breaking it up as it cooks. Drain any excess fat.
3. Add the diced onion to the skillet and sauté for 3 minutes until softened. Then, add the minced garlic and cook for an additional 1 minute.
4. Stir in the uncooked pasta, diced tomatoes with their juice, beef broth, ketchup, mustard, tomato paste, salt, pepper, smoked paprika, and oregano. Bring the mixture to a boil.
5. Reduce the heat to low, cover the skillet, and simmer for 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
6. Remove the skillet from the heat and stir in the shredded cheddar and mozzarella cheeses until they are melted and well combined.
7. Arrange the frozen tater tots in a single layer on top of the pasta mixture.
8. Place the skillet in the preheated oven and bake for 20-25 minutes, or until the tater tots are golden brown and crispy.
9. Remove from the oven and let it cool for a few minutes. Optionally, garnish with sliced green onions and chopped pickles before serving.
