Ingredients
- 1 lb Ground Beef (or ground turkey, chicken, or pork)
- 3 medium Potatoes, peeled and diced
- 1 medium Onion, chopped
- 1 bell pepper, chopped
- 2 cloves Garlic, minced
- 1 tsp Paprika
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic Powder
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1 cup Beef Broth (or chicken broth)
- 1 cup Cheddar Cheese, shredded (or your favorite cheese)
- 1 tbsp Olive Oil, for cooking
- Fresh Parsley, optional for garnish
Instructions
1. In a large skillet over medium heat, heat the olive oil. Add the diced potatoes and cook for 8-10 minutes, stirring occasionally, until they begin to soften and lightly brown.
2. Stir in the chopped onion and bell pepper, cooking for 3-4 minutes until the vegetables are tender.
3. Push the veggies to the side of the skillet, add the ground beef, and cook until browned, breaking it apart as it cooks. Drain any excess fat if needed.
4. Stir in the minced garlic, paprika, onion powder, garlic powder, salt, and black pepper. Cook for 1-2 minutes until fragrant.
5. Pour in the beef broth, stir everything together, cover with a lid, and let it simmer for 8-10 minutes or until the potatoes are fully tender and the broth reduces.
6. Sprinkle the shredded cheddar cheese evenly over the skillet. Cover again for 2-3 minutes until the cheese melts.
7. Remove from heat, garnish with fresh parsley if desired, and serve hot!
