Ingredients
- 1 pound ground beef
- 1 small onion, diced
- 1 packet taco seasoning
- 1 can diced tomatoes with green chilies
- 1 cup corn kernels
- 1 can black beans, drained and rinsed
- 1 1/2 cups shredded cheddar cheese
- 2 cups cooked rice
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
1. Heat a large skillet over medium heat. Add ground beef and diced onion. Cook until beef is browned and onion is softened, about 7-10 minutes. Drain excess fat.
2. Add taco seasoning and stir to coat the beef mixture. Pour in diced tomatoes, corn, and black beans. Stir to combine.
3. Fold in cooked rice until evenly distributed. Cook for an additional 5 minutes.
4. Sprinkle shredded cheddar cheese over the top, cover, and let melt for 2-3 minutes.
5. Serve in bowls or on plates, garnished with cilantro if desired.
