  • 1 cup orzo pasta

  • 1 bell pepper (any color), diced

  • 1 yellow onion, chopped

  • 3 cloves garlic, minced

  • 14 oz canned diced tomatoes

  • 2 cups fresh spinach

  • 2 cups low-sodium chicken broth

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • Olive oil (for cooking)


Instructions

  1. Cook Sausage: In a large skillet, heat a bit of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it into crumbles with a wooden spoon.

  2. Sauté Veggies: Add the chopped onion and bell pepper to the skillet. Cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 1 minute.

  3. Add Orzo & Tomatoes: Stir in orzo pasta, diced tomatoes (with juice), basil, and oregano. Cook for 2 minutes to let the flavors combine.

  4. Simmer with Broth: Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat, cover, and let it simmer for 10-12 minutes until the orzo is tender and has absorbed most of the liquid.

  5. Finish with Spinach: Stir in fresh spinach and cook until wilted, about 2 minutes. Serve hot and enjoy!

Notes

  • For a spicier version, opt for spicy Italian sausage or add a pinch of red pepper flakes.
