Ingredients
-
1 lb Italian sausage (sweet or spicy)
-
1 cup orzo pasta
-
1 bell pepper (any color), diced
-
1 yellow onion, chopped
-
3 cloves garlic, minced
-
14 oz canned diced tomatoes
-
2 cups fresh spinach
-
2 cups low-sodium chicken broth
-
1 tsp dried basil
-
1 tsp dried oregano
-
Olive oil (for cooking)
Instructions
-
Cook Sausage: In a large skillet, heat a bit of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it into crumbles with a wooden spoon.
-
Sauté Veggies: Add the chopped onion and bell pepper to the skillet. Cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 1 minute.
-
Add Orzo & Tomatoes: Stir in orzo pasta, diced tomatoes (with juice), basil, and oregano. Cook for 2 minutes to let the flavors combine.
-
Simmer with Broth: Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat, cover, and let it simmer for 10-12 minutes until the orzo is tender and has absorbed most of the liquid.
-
Finish with Spinach: Stir in fresh spinach and cook until wilted, about 2 minutes. Serve hot and enjoy!
Notes
-
For a spicier version, opt for spicy Italian sausage or add a pinch of red pepper flakes.
-
You can swap out the spinach for other greens like kale or arugula.
-
This recipe can easily be made ahead of time and stored in the fridge for up to 3 days.
-
If you’d like to make it gluten-free, swap the orzo for gluten-free pasta.
