Sauce Base:

  • 1 tablespoon Dijon mustard

Main Components:

  • 16 ounces fresh potato gnocchi
  • 2 1/2 cups cooked chicken, torn into bite-sized pieces
  • 1 cup sweet peas, fresh or frozen
  • Salt and freshly ground black pepper
  • Grated Parmesan for serving (optional)

Instructions

  1. Sauté Vegetables:
    In a large pot or Dutch oven, melt butter over medium heat. Add carrots, celery, mushrooms, and onion. Sauté for 6–8 minutes until softened. Stir in garlic, thyme, and parsley.

  2. Make the Roux:
    Sprinkle in flour and stir constantly for 1–2 minutes to form the roux.

  3. Create the Sauce:
    Gradually pour in chicken stock and milk, whisking until smooth. Stir in Dijon mustard, Italian seasoning, and nutmeg. Simmer for 5 minutes until thickened.

  4. Add Gnocchi & Chicken:
    Stir in gnocchi, chicken, and peas. Simmer for 7–10 minutes until gnocchi is tender and everything is heated through.

  5. Season & Serve:
