Ingredients
- 1 1/2 teaspoon thyme
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 8 pieces chicken thighs
- 5 slices bacon, cooked and fat reserved
- 1/2 head cabbage, roughly chopped
- 4 potatoes, peeled and sliced into 1/4-inch rounds
- 1 medium onion, sliced
- 1/2 cup chicken stock
- Salt and pepper to taste
Instructions
1. Combine the thyme, smoked paprika, salt, onion powder, garlic powder, and black pepper in a small bowl to create the dry rub.
2. Cook the bacon in a large pot until crispy. Remove and set aside, reserving the fat.
3. Rub the dry spice mixture all over the chicken thighs and sear in the pot with the reserved bacon fat until golden brown.
4. Layer the chopped cabbage, sliced potatoes, and sliced onion in the pot.
5. Pour the chicken stock over the vegetables.
6. Place the seared chicken thighs on top, cover, and simmer on medium-low heat for 35-40 minutes until cooked through and vegetables are tender.
7. Season with additional salt and pepper to taste before serving.
Notes
Serve warm garnished with crispy bacon crumbles. This dish pairs beautifully with crusty bread or a fresh green salad.
