  • 1 cup heavy whipping cream

  • 4 to 5 ounces fresh spinach

  • 1 cup sun-dried tomatoes in olive oil, chopped

  • 1/2 cup freshly shredded parmesan cheese

  • 1 tablespoon sun-dried tomato oil

  • 1/3 cup tomato paste

  • 1 teaspoon red chili flakes

  • 5 garlic cloves, minced

  • 1/4 cup fresh basil

  • 1 teaspoon kosher salt

  • 1 teaspoon black pepper


Instructions

  • Cook Pasta: In a large pot, bring the chicken stock to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.

  • Sauté Aromatics: In the same pot, heat the sun-dried tomato oil over medium heat. Add onions, garlic, and red chili flakes. Cook until fragrant, about 3 minutes.

  • Make Sauce: Stir in the tomato paste and cook for 1 minute. Pour in the heavy cream and bring to a simmer. Add the sun-dried tomatoes and stir until combined.

  • Add Spinach & Pasta: Fold in the fresh spinach and cook until wilted, about 2-3 minutes. Add the cooked pasta and toss to combine.

  • Finish: Stir in the parmesan cheese, fresh basil, salt, and pepper. Serve immediately and enjoy!
