Ingredients
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup buttermilk (or regular milk + 1 tsp vinegar)
- 1 large egg
- 1 tsp vanilla extract
- 2 tbsp melted butter
- ¼ cup mini chocolate chips or blueberries (optional)

Instructions
1. Preheat Oven: To 375°F (190°C). Grease a mini muffin tin.
2. Mix Dry Ingredients: In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
3. Mix Wet Ingredients: In another bowl, whisk together the buttermilk, egg, vanilla, and melted butter.
4. Combine: Pour the wet ingredients into the dry ingredients and stir just until combined. Fold in the chocolate chips or blueberries if using.
5. Fill & Bake: Spoon the batter into the mini muffin tin, filling each about ¾ full. Bake for 10–12 minutes or until golden and a toothpick comes out clean.
6. Serve: Let the Pancake Poppers cool slightly, then serve with maple syrup, powdered sugar, or honey for dipping.
Notes
