For the Chicken:

  • 4 small–medium chicken breasts (or 2 large, halved)

  • Salt and pepper, to taste

  • 2 tablespoons olive oil

For the Crispy Coating:

  • ½ cup grated Parmesan cheese

  • ½ cup panko breadcrumbs

For the Creamy Garlic Sauce:

  • 34 cloves garlic, minced

  • 1 cup light cream or heavy cream

  • 1 tablespoon Italian seasoning or oregano

  • ½ cup Parmesan cheese, grated

  • 1 cup spinach, chopped (optional)


Instructions

  1. Season & Sear: Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat. Sear each side for 4–5 minutes until golden brown. Remove and set aside.

  2. Coat the Chicken: In a small bowl, combine grated Parmesan and panko. Press the mixture onto both sides of the seared chicken.

  3. Bake: Place crusted chicken on a baking sheet. Bake at 400°F (200°C) for 15–20 minutes until fully cooked and crispy.

  4. Make Sauce: In the same skillet, sauté garlic for 30 seconds. Stir in cream and Italian seasoning. Let it simmer 2–3 minutes. Add Parmesan and spinach; cook until sauce thickens.

  5. Serve: Pour the sauce over the crispy chicken and serve warm.

Notes

  • For extra crispiness, broil the chicken for the last 2 minutes.

  • Heavy cream gives a richer flavor, but light cream works well too.

  • Fresh spinach adds color and nutrients, but it’s optional.

  • Store leftovers in an airtight container for up to 3 days.
