- 8 oz penne pasta (whole grain or gluten-free)
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) crushed tomatoes
- 1 teaspoon dried basil
- Salt and black pepper to taste
- 1 cup silken tofu
- 1/4 cup nutritional yeast
- Fresh parsley or basil for garnish
Instructions
- Bring a large pot of salted water to a rolling boil. Add penne pasta and cook until al dente, about 8-10 minutes. Drain and set aside, reserving a bit of pasta water.
- In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until softened, approximately 3-5 minutes.
- Add crushed tomatoes, dried basil, salt, and black pepper to the skillet. Stir and let simmer for about 10 minutes.
- Transfer the tomato mixture to a blender. Add silken tofu and nutritional yeast, blending until smooth. If the sauce is too thick, add reserved pasta water to reach desired consistency.
- Pour the sauce over the cooked penne pasta. Toss gently with tongs to coat evenly. Serve garnished with fresh parsley or basil.
