  • 1 can (15 oz) crushed tomatoes

  • Salt and black pepper to taste
  • 1 cup silken tofu
  • 1/4 cup nutritional yeast
  • Fresh parsley or basil for garnish

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add penne pasta and cook until al dente, about 8-10 minutes. Drain and set aside, reserving a bit of pasta water.
