Description
Peruvian Chicken and Rice with Green Sauce is a flavorful dish featuring marinated grilled chicken, fragrant rice, and a zesty green sauce.
Ingredients
- 1 1/2 pound boneless, skinless chicken thighs
- 3 tablespoon olive oil
- 4–5 garlic cloves, minced
- 1/4 cup lime juice
- 2 tablespoon soy sauce or liquid aminos
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper, to taste
- 2 cup long-grain or jasmine rice, rinsed
- 4 cup low-sodium chicken broth
- 1 small shallot, finely chopped
- 2 cloves garlic, minced
- 2 tablespoon butter
- Salt and pepper, to taste
- 1 cup frozen peas (optional)
- 1 cup fresh cilantro leaves
- 1 cup fresh parsley leaves
- 1 small jalapeño, seeds removed for less heat
- 2 cloves garlic
- 2–3 tablespoon lime juice
- 3–4 tablespoon extra virgin olive oil
- Salt, to taste
Instructions
1. In a bowl, whisk together the olive oil, minced garlic, lime juice, soy sauce, cumin, paprika, salt, and pepper. Add the chicken thighs and let them marinate for at least 30 minutes, or up to 2 hours for maximum flavor.
2. In a pot, sauté the chopped shallot and minced garlic in butter until softened. Add the rinsed rice and stir for 1 minute. Pour in the chicken broth, bring to a boil, then cover and reduce the heat to low. Cook for 15 minutes, then stir in the frozen peas (if using). Cover and let the rice rest for 5-10 minutes before fluffing with a fork.
3. Preheat your grill or a skillet over medium-high heat. Grill the marinated chicken thighs for 6-7 minutes per side, or until the internal temperature reaches 165°F.
4. In a blender, combine the cilantro, parsley, jalapeño, garlic, lime juice, olive oil, and a pinch of salt. Blend until smooth and creamy.
Notes
Serve the chicken over the rice and drizzle with the green sauce. Garnish with additional cilantro and lime wedges.
