  • 6–8 pineapple rings
  • 1/4 cup granulated sugar (for coating)
  • 1/2 teaspoon cinnamon (for coating)

Instructions

  1. Prepare the pineapple by draining and drying canned rings or slicing fresh pineapple into 1/2-inch thick rings.
  2. In a medium bowl, whisk together the flour, baking powder, sugar, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk the beaten egg, buttermilk, vanilla extract, and vegetable oil.
  4. Gently pour the wet ingredients into the dry ingredients and stir just until combined.
  5. Heat about 2 inches of vegetable oil in a large pot over medium heat until it reaches 350°F.
  6. Dip each pineapple ring into the batter, coating it completely.
  7. Carefully lower the battered ring into the hot oil and fry for 1-2 minutes per side until golden brown.
  8. Transfer the fried fritters to a paper towel-lined plate to drain.
  9. In a small bowl, mix together the remaining sugar and cinnamon for coating.
  10. While the fritters are still warm, toss them gently in the cinnamon-sugar mixture.
