- 6–8 pineapple rings
- 1/4 cup granulated sugar (for coating)
- 1/2 teaspoon cinnamon (for coating)
Instructions
- Prepare the pineapple by draining and drying canned rings or slicing fresh pineapple into 1/2-inch thick rings.
- In a medium bowl, whisk together the flour, baking powder, sugar, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk the beaten egg, buttermilk, vanilla extract, and vegetable oil.
- Gently pour the wet ingredients into the dry ingredients and stir just until combined.
- Heat about 2 inches of vegetable oil in a large pot over medium heat until it reaches 350°F.
- Dip each pineapple ring into the batter, coating it completely.
- Carefully lower the battered ring into the hot oil and fry for 1-2 minutes per side until golden brown.
- Transfer the fried fritters to a paper towel-lined plate to drain.
- In a small bowl, mix together the remaining sugar and cinnamon for coating.
- While the fritters are still warm, toss them gently in the cinnamon-sugar mixture.
Notes
Serve warm on their own or with vanilla ice cream. Consider drizzling with honey or sprinkling with powdered sugar for added sweetness.
