  • 2 tablespoon olive oil, divided
  • 1 tablespoon Dijon mustard
  • Salt and pepper, to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon onion powder
  • 2 tablespoon butter
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 3/4 cup heavy cream
  • 1–2 tablespoon Dijon mustard
  • 1 tablespoon whole grain mustard (optional)
  • 1 teaspoon dried thyme

Instructions

  1. Preheat oven to 375°F.
  2. Pat the pork tenderloins dry with paper towels and season with salt, pepper, oregano, thyme, and onion powder.
  3. Heat 1 tablespoon of olive oil in a large, oven-safe skillet over medium-high heat and sear the pork on all sides for 2-3 minutes until golden brown.
  4. Transfer the skillet to the preheated oven and roast the tenderloins for 18-25 minutes until the internal temperature reaches 145°F. Remove from the oven and tent with foil.
  5. In the same skillet, melt the butter over medium heat, add minced garlic, and sauté for about a minute.
  6. Pour in lemon juice, heavy cream, Dijon mustard, and optional whole grain mustard. Scrape up browned bits and bring to a gentle simmer for 2-3 minutes.
  7. Stir in dried thyme and season with salt and pepper to taste. Thin with water if necessary.
  8. Slice the pork into 1-inch thick slices and serve with the Dijon Mustard Cream Sauce.
