Description

Cozy up to a comforting one-pot wonder with this delicious Pot Homestyle Chicken and Vegetables recipe! This hearty dish is perfect for busy weeknights or relaxing family dinners, packed with tender chicken, flavorful veggies, and a rich, savory broth.

Ingredients

Scale
  • 2 lbs chicken breast or thighs, cut into chunks
  • 4 cups mixed vegetables (carrots, potatoes, green beans)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

1. Set your Instant Pot to “Sauté.” Add the olive oil and let it heat up. Then, add the chopped onion and cook for 2-3 minutes until softened. Stir in the minced garlic and cook for another 30 seconds, just until fragrant.

2. Add the chicken chunks to the pot and season with salt, pepper, thyme, and paprika. Stir to coat the chicken in the seasonings and let it cook for 2-3 minutes, just to start browning the outside.

3. Toss in the carrots, potatoes, and green beans. Pour in the chicken broth and gently stir everything together, making sure the vegetables are submerged.

4. Seal the Instant Pot lid and set it to “Manual” or “Pressure Cook” on high for 10 minutes. Once the time is up, allow the pressure to release naturally for 5 minutes, then do a quick release.

5. Carefully open the lid, give the Pot Homestyle Chicken and Vegetables a gentle stir, and taste for seasoning. Adjust the salt and pepper if needed. Serve this comforting one-pot meal hot, with crusty bread or rice for a satisfying and hearty family dinner.

Notes

For a vegetarian option, replace the chicken with cubed tofu or diced turkey.

Feel free to use seasonal vegetables or mix and match your favorites, such as broccoli, zucchini, or sweet potatoes.

If using different protein or larger vegetable pieces, you may need to adjust the pressure cooking time accordingly.
