Instructions
1. Heat the pan by adding olive oil or butter to a large skillet over medium heat.
2. Cook the vegetables by adding diced potatoes, onion, and bell pepper. Sauté until golden and tender, about 8-10 minutes. Stir in minced garlic and cook for an additional minute.
3. Add the eggs by pouring in the whisked eggs mixed with milk. Cook gently, stirring occasionally, until softly scrambled.
4. Mix in the cheese and any cooked meat until melted and well combined.
5. Season with salt and pepper to taste. Garnish with fresh herbs.

For a meatless version, omit the cooked meat.
