Description
Delicious Pumpkin Donut Holes capture the essence of fall, blending the warm, comforting flavors of pumpkin and pumpkin pie spice into a bite-sized treat that’s hard to resist.
Ingredients
- 1 cup low fat buttermilk
- 1 egg
- 1/2 cup pumpkin puree
- 1/4 cup unsalted butter, melted
- 2 cups all-purpose flour
- 1/2 cup dark brown sugar
- 1 1/2 tbsp baking powder
- 2 tsp pumpkin pie spice
- 1 tsp vanilla extract
- Pinch of salt
Instructions
1. Start by preheating your oven to 350°F (175°C) and lightly greasing a mini muffin pan or donut hole pan.
2. In a large bowl, whisk together the buttermilk, egg, pumpkin puree, melted butter, and vanilla extract until smooth and combined.
3. Next, stir in the flour, brown sugar, baking powder, pumpkin pie spice, and a pinch of salt. Mix the batter just until everything is incorporated, being careful not to overmix.
4. Using a spoon or small cookie scoop, portion the batter into the prepared mini muffin cups, filling each one about 3/4 full.
5. Pop the pan in the preheated oven and bake for 10–12 minutes, or until a toothpick inserted into the center comes out clean.
6. While the Pumpkin Donut Holes are baking, combine the powdered sugar and an extra teaspoon of pumpkin pie spice in a small bowl.
7. Once the donut holes have cooled slightly, roll or gently toss them in the spiced powdered sugar until they’re fully coated.
8. Serve your freshly baked Pumpkin Donut Holes warm or at room temperature.
Notes
Tips for Perfect Pumpkin Donut Holes:
Choosing the Right Pumpkin Puree: Opt for a pure pumpkin puree without any added sugars or spices for the best flavor and texture.
Avoiding Common Baking Mistakes: Be sure not to overmix the batter, and resist the urge to open the oven door too often while they’re baking. Let the donut holes cool slightly before coating them in the spiced powdered sugar for a smooth, even finish.
