Ingredients
- 4 slices thick bread (like brioche or challah)
- 1 cup pumpkin puree
- 2 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 2 tablespoon brown sugar
- 1 tablespoon butter or oil for cooking
- Maple syrup for serving

Instructions
1. In a large mixing bowl, combine pumpkin puree, eggs, and milk. Whisk until smooth.
2. Add vanilla extract, ground cinnamon, ground nutmeg, ground ginger, salt, and brown sugar (if using). Whisk again until well combined.
3. Preheat a skillet or griddle over medium heat and add butter or oil.
4. Dip each slice of bread into the pumpkin batter, ensuring both sides are coated.
5. Cook each slice for 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes.
6. Repeat with remaining slices, adding more butter or oil as needed.
