Description

Pumpkin Spice Gooey Cake with Cream Cheese Frosting is a decadent, fall-inspired treat combining the warm flavors of pumpkin and spices with a rich filling and creamy frosting.

Ingredients

Scale
  • 1 box yellow cake mix
  • 1 large egg
  • 1/2 cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 8 ounce cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup pumpkin puree
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 4 cup powdered sugar
  • 8 ounce cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1/4 cup brown sugar, packed
  • 2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

1. Preheat your oven to 350°F. Grease a 9×13-inch baking pan and set it aside.

2. In a large bowl, combine the yellow cake mix, egg, melted butter, pumpkin puree, and vanilla extract. Mix until the batter is smooth and well-combined. Spread the cake batter evenly into the prepared baking pan.

3. In another bowl, beat the cream cheese until it’s smooth and creamy. Then, add the eggs, vanilla, pumpkin puree, melted butter, cinnamon, nutmeg, cloves, and powdered sugar. Mix everything together until the filling is well-incorporated and has a velvety texture.

4. Carefully pour the pumpkin spice gooey filling over the cake batter, spreading it evenly across the top.

5. Pop the pan in the preheated oven and bake for 40–45 minutes, or until a toothpick inserted into the center comes out mostly clean. Allow the cake to cool completely on a wire rack.

6. In a mixing bowl, beat the cream cheese, butter, brown sugar, powdered sugar, and vanilla extract until the frosting is smooth and creamy.

7. Once the Pumpkin Spice Gooey Cake has cooled, spread the brown sugar cream cheese frosting evenly over the top. Slice and serve this decadent treat.

Notes

This cake can be stored in the refrigerator for up to 5 days. The cream cheese frosting helps keep the cake moist and fresh.
