Ingredients
- 2 1/2 cup all-purpose flour
- 1 teaspoon baking soda

- 1/2 teaspoon ground ginger

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup pumpkin puree

Instructions
1. Preheat your oven to 350°F. Line two baking sheets with parchment paper.
2. Mix together the all-purpose flour, baking soda, cinnamon, ginger, nutmeg, and salt in a medium bowl. Set aside.
3. In a large bowl, beat the softened unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes.
4. Add the pumpkin puree, egg, and vanilla extract to the butter-sugar mixture and mix until smooth.
5. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
6. In a small bowl, mix the remaining granulated sugar and ground cinnamon. Roll the cookie dough into balls and coat in the cinnamon-sugar mixture.
7. Arrange the coated dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes or until edges are lightly golden.
8. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack.
