- 4 large russet potatoes
- 1 lb ground beef
- 1 cup shredded cheddar cheese
- ½ cup crumbled bacon
- ½ cup ranch dressing
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and black pepper to taste
- Breadcrumbs for coating
- Oil for frying
Instructions
- Cook the potatoes: Bring a pot of water to a boil, add whole, unpeeled russet potatoes, and simmer for about 15 minutes until fork-tender. Drain, cool, and hollow out the insides.
- Prepare the seasoned mash: In a bowl, mash the scooped-out potato flesh with garlic powder, onion powder, salt, and black pepper.
- Cook the beef filling: In a skillet, cook ground beef until browned. Drain excess fat, then stir in ranch dressing, cheddar cheese, and crumbled bacon.
- Stuff the potato shells: Spoon the cheeseburger filling into the hollowed-out potato shells and top with more cheddar cheese.
- Fry the tater kegs: Heat oil in a deep fryer or large pot to 350°F (175°C). Roll the stuffed potatoes in breadcrumbs, then fry until golden brown, about 5-7 minutes. Drain on paper towels.
Notes
For a healthier option, consider using ground turkey or chicken, or bake the tater kegs instead of frying them.
