- 1 red bell pepper, finely diced
- 1 medium cucumber, chopped

For the Ranch Dressing:
- 8 oz sour cream
- ½ cup mayo
- 1 oz packet ranch seasoning
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the tri-color rotini pasta and cook it according to the package instructions, usually around 8-10 minutes for an al dente texture. Drain and rinse with cold water to cool.
- Prepare the Vegetables: While the pasta is cooling, finely dice the red bell pepper, chop the cucumber, and finely dice the broccoli florets.
- Make the Ranch Dressing: In a small mixing bowl, whisk together the sour cream, mayo, and ranch seasoning until smooth and well combined.
- Combine Everything: In a large mixing bowl, add the cooled pasta, diced bell pepper, cucumber, and broccoli. Pour the ranch dressing over the mixture and toss until everything is evenly coated.
- Chill and Serve: Cover and refrigerate for at least 30 minutes before serving to allow the flavors to blend. Serve chilled and enjoy!
