Ingredients

Scale
  • 1 cup graham cracker crumbs
  • ¼ cup melted butter
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup sour cream
  • ⅓ cup raspberry preserves

Instructions

Preparing the Crust

1. Preheat your oven to 325°F (163°C).
2. In a mixing bowl, combine graham cracker crumbs and melted butter. Stir until the crumbs are evenly coated.
3. Lightly grease a mini muffin pan. Press the crumb mixture firmly into the bottom of each muffin cup.
4. Bake the crust for about 5 minutes, then let it cool slightly.

Making the Filling

1. In a large mixing bowl, beat together cream cheese and granulated sugar until smooth.
2. Add in eggs, vanilla extract, and sour cream, mixing until well combined. Avoid overmixing.

Adding the Raspberry Swirl

1. Pour the cheesecake filling into each crust, filling them about three-quarters full.
2. Drop spoonfuls of raspberry preserves onto the surface of the filling.
3. Gently swirl the preserves into the filling with a toothpick or skewer.

Baking and Cooling

1. Bake for 15-18 minutes until set around the edges but slightly jiggly in the center.
2. Let cool at room temperature for about 30 minutes, then chill in the refrigerator for at least 2 hours before serving.

Notes

Garnish with fresh raspberries or whipped cream for an elegant touch. Store leftovers in an airtight container in the fridge for up to a week.
