Ingredients
- 1 head garlic
- 1 teaspoon olive oil
- 2 pound red potatoes, washed and quartered
- 1 teaspoon kosher salt
- 6 tablespoon unsalted butter
- 3/4 cup half-and-half
- Freshly ground black pepper, to taste
Instructions
1. Preheat your oven to 375°F. Slice off the top 1/4 inch of the garlic head to expose the cloves, drizzle with olive oil, wrap tightly in foil, and roast for about an hour until soft and golden. Once cooled, squeeze out those aromatic roasted cloves.
2. Place the quartered red potatoes in a large pot, cover with cold water, add a teaspoon of kosher salt, and bring to a boil. Reduce heat and let simmer until tender, about 15 minutes. Drain well.
3. In a small saucepan, gently heat the butter and half-and-half together until the butter has melted.
4. Return the drained potatoes to the pot, add the roasted garlic, pour in the warm butter-half-and-half mixture, and start mashing until creamy but still maintain a few lumps. Season with salt and freshly ground black pepper to taste.
