Ingredients
12 vanilla wafer cookies
16 oz cream cheese, softened
½ cup granulated sugar
2 eggs
1 tsp vanilla extract
Red food coloring
Blue food coloring
Whipped cream and berries for topping
Instructions
1. Preheat your oven to 325°F (160°C) and line a muffin tin with paper liners.
2. Place a vanilla wafer cookie at the bottom of each liner.
3. In a large mixing bowl, beat the cream cheese, sugar, eggs, and vanilla extract until smooth and creamy.
4. Divide the batter into three separate bowls. Leave one bowl plain, tint one with red food coloring, and the other with blue food coloring.
5. Spoon small amounts of each colored batter into the muffin cups, creating a layered effect.
6. Bake for 18-20 minutes, until the centers are set. Allow to cool completely.
7. Chill in the refrigerator for at least 2 hours before serving.
