- 1/4 tsp red pepper flakes (optional)
- 1 tsp Italian seasoning

Instructions
- Cook the Potatoes: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the halved baby potatoes and cook for 10-12 minutes, stirring occasionally, until golden brown and fork-tender. Remove from the skillet and set aside.
- Cook the Sausage: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced smoked sausage and cook until browned on both sides, about 5 minutes.
- Sauté the Vegetables: Add the diced onion, red bell pepper, and minced garlic to the skillet. Sauté for 3-4 minutes until softened and fragrant.
- Combine Ingredients: Return the cooked potatoes to the skillet. Pour in the chicken stock and stir to deglaze the pan. Add Italian seasoning, red pepper flakes (optional), salt, pepper, and hot sauce (optional). Stir well to coat everything in the seasoning.
- Simmer and Serve: Let everything simmer for 3-5 minutes to blend the flavors. Remove from heat, garnish with fresh parsley, and sprinkle with grated Parmesan cheese. Serve hot and enjoy!
