  • 1 lb turkey sausage, sliced
  • 2 large sweet potatoes, peeled and cut into bite-sized cubes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 3 cloves garlic, minced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss sweet potato cubes with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread on a baking sheet.
  3. Roast sweet potatoes for about 20 minutes or until tender and lightly browned.
  4. While sweet potatoes are roasting, heat a skillet over medium-high heat. Cook sliced turkey sausage until browned, about 5-7 minutes.
  5. In a small bowl, whisk together honey, soy sauce, and minced garlic to make the honey garlic sauce.
  6. Add roasted sweet potatoes to the skillet with sausage, pour the honey garlic sauce over, and toss gently to coat.
  7. Cook for an additional 2-3 minutes, allowing the sauce to thicken and flavors to meld.
