Sausage Potato and Kale Soup is a hearty and flavorful comfort food that blends smoky sausage, tender potatoes, and nutrient-rich kale.
Ingredients
- 1 pound smoked sausage, sliced into coins
- 1 medium yellow onion, finely chopped
- 4 cloves garlic, minced
- 2 teaspoon smoked paprika
- 4 medium potatoes, cubed
- 4 cup no-sodium chicken bone broth
- 2 tablespoon heavy whipping cream
- 4 cup roughly chopped Tuscan or curly kale
Instructions
1. Brown the sausage in a large pot over medium heat until browned, about 5–7 minutes. Remove and set aside.
2. In the same pot, sauté the chopped onion and minced garlic until softened and fragrant, about 3–4 minutes.
3. Stir in the smoked paprika and cook for 1 minute to release its flavor.
4. Add the cubed potatoes, chicken bone broth, and browned sausage back into the pot. Bring to a boil.
5. Reduce heat to low and simmer until the potatoes are tender, about 15–20 minutes.
6. Stir in the chopped kale and cook until wilted, about 5 minutes.
7. Pour in the heavy cream, stirring to combine. Simmer for an additional 5 minutes.
8. Ladle the soup into bowls and enjoy hot.
Notes
For a low-carb option, swap potatoes for cauliflower florets.
For a vegetarian alternative, omit sausage and use vegetable broth.
