Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cup potatoes, peeled and diced (russet or Yukon gold)
  • 4 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme or Italian seasoning
  • 1/2 cup shredded cheddar cheese (optional)
  • Fresh parsley or green onions, for garnish

Instructions

1. Heat the olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it into crumbles. Drain excess grease if necessary.

2. Stir in the diced onion and minced garlic. Sauté until softened and fragrant, about 3-5 minutes.

3. Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.

4. Pour in the heavy cream or half-and-half. Season with salt, pepper, and dried thyme (or Italian seasoning). Simmer for another 5 minutes to meld flavors.

5. If desired, stir in shredded cheddar cheese. Ladle into bowls, garnish with fresh parsley or green onions, and serve hot.

Notes

This soup can be made vegetarian by omitting the sausage and using vegetable broth. It can also be frozen for up to 3 months.
