Ingredients
- 2 medium zucchini
- 2 cup sliced mushrooms
- 1 medium onion
- 2 tablespoon olive oil
- 2 cloves garlic
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
Instructions
1. Wash the zucchini and mushrooms thoroughly. Slice the zucchini into half-moons and slice the mushrooms and onion.
2. Mince the garlic.
3. Heat a large skillet over medium heat and add the olive oil.
4. Once the oil is hot, add the sliced onions and sauté for about 3 minutes until they start to soften.
5. Add the minced garlic and sliced mushrooms, cooking for an additional 3-4 minutes until the mushrooms are tender.
6. Add the sliced zucchini, seasoning with salt, black pepper, and dried thyme. Sauté for another 3-5 minutes until the zucchini is tender but still firm.
7. Taste and adjust seasoning as needed. Serve garnished with freshly chopped parsley if desired.
Notes
This dish pairs beautifully with grilled chicken, baked fish, or roasted pork. It also makes a wonderful side dish to accompany rice, quinoa, or pasta.
