Ingredients
- 4 pieces boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 1/2 cup dry orzo pasta
- 2 cup fresh spinach
- Fresh basil or parsley, chopped (for garnish)
Instructions
1. Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
2. Place the diced onion, minced garlic, and chopped sun-dried tomatoes in the slow cooker. Lay the seasoned chicken on top, then pour in the chicken broth and heavy cream.
3. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is cooked through.
4. Remove the cooked chicken from the slow cooker and shred it using two forks, then return the shredded chicken to the slow cooker.
5. Stir in the dry orzo pasta, cover, and cook on high for an additional 20-25 minutes, until the orzo is tender.
6. Stir in the Parmesan cheese and fresh spinach until the spinach wilts. Garnish with chopped basil or parsley, and serve warm.
