  • 1 pound boneless, skinless chicken thighs or breasts
  • 1 cup diced onion
  • 2 cloves minced garlic
  • 4 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed rosemary
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup uncooked orzo pasta
  • 1/2 cup grated parmesan cheese
  • 1/4 cup heavy cream (optional)

Instructions

1. Season the chicken with salt and pepper. Optionally, sear the chicken in a skillet with olive oil or butter before adding it to the slow cooker.

2. Combine the diced onion, minced garlic, chicken broth, dried thyme, dried oregano, crushed rosemary, and red pepper flakes in the slow cooker. Stir to combine.

3. Cover and cook on low for 4-5 hours, until the chicken is tender and shreds easily.

4. About 30 minutes before serving, stir in the uncooked orzo pasta.

5. Once the orzo is cooked, stir in the grated parmesan cheese and heavy cream until melted and creamy. Shred the chicken and return it to the pot or serve as is.

6. Ladle into bowls and serve hot, garnished with additional parmesan if desired.
