Ingredients

Scale
  • 1 pound lean ground beef
  • 1 packet taco seasoning (or homemade)
  • 1 can (15 ounce) black beans, rinsed and drained
  • 1 can (15 ounce) corn, drained
  • 1 can (14.5 ounce) fire-roasted diced tomatoes
  • 2 cup shredded cheddar cheese
  • 1 cup chopped bell peppers (any color)
  • 2 cup crushed tortilla chips
  • 2 green onions, chopped

Instructions

1. First, brown the ground beef in a skillet over medium heat until fully cooked, then drain any excess fat. Transfer the cooked beef to the slow cooker and stir in the taco seasoning, black beans, corn, diced tomatoes, and bell peppers.

2. Next, layer half of the shredded cheese over the mixture, then add the crushed tortilla chips on top. Finish with the remaining cheese. Cover and cook on low for 4-6 hours, or until the casserole is heated through and the flavors have melded together.

3. When the Slow Cooker Taco Casserole is ready, serve it warm, garnished with the chopped green onions.

Notes

You can prepare Slow Cooker Taco Casserole in advance. To do this, you can assemble all the ingredients in the slow cooker insert the night before, cover it, and refrigerate it. In the morning, just place the insert back into the slow cooker base and cook as instructed. If you have leftovers, let the casserole cool completely, then transfer it to an airtight container. It can be stored in the refrigerator for up to 3-4 days. For longer storage, consider freezing the leftovers; they can last up to 3 months in the freezer.
