Ingredients
- 1 1/2 pound baby potatoes, halved or quartered
- 14 ounce smoked sausage, thickly sliced
- 1 bell pepper, chopped
- 1 small onion, thinly sliced
- 3 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
Instructions
1. Preheat the oven to 400°F and grease a large baking dish or line it with foil.
2. In a large bowl, combine the baby potatoes, smoked sausage, bell pepper, onion, olive oil, garlic powder, smoked paprika, cayenne pepper (if using), salt, and pepper. Toss until evenly coated.
3. Transfer the mixture to the prepared baking dish, spreading it out in an even layer. Bake uncovered for 40–45 minutes, stirring halfway through, until the potatoes are fork-tender and the sausage is nicely browned at the edges.
Notes
Garnish with chopped parsley or green onions before serving.
