  • 1 lb ground beef

  • 1 cup shredded smoked cheddar cheese

  • 1 cup diced onions

  • 2 cloves garlic, minced

  • 1 tsp smoked paprika

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tbsp Worcestershire sauce

  • 1 cup cooked rice

  • 1 cup diced tomatoes

  • 1 cup shredded mozzarella cheese

  • Fresh parsley, for garnish


Instructions

  • Preheat Oven: Set your oven to 375°F (190°C).

  • Cook Beef: In a large skillet, cook ground beef with diced onions and garlic until browned. Drain excess fat.

  • Season & Mix: Stir in smoked paprika, salt, pepper, Worcestershire sauce, cooked rice, and diced tomatoes. Mix until well combined.

  • Stuff Peppers: Halve and clean out bell peppers. Spoon the beef mixture into each pepper half, packing tightly.

  • Top with Cheese: Sprinkle smoked cheddar and mozzarella generously over the top.

  • Bake Covered: Place the stuffed peppers in a baking dish, cover with foil, and bake for 30 minutes.

  • Uncover & Finish: Remove foil and bake for another 10 minutes, until cheese is bubbly and golden.

  • Garnish & Serve: Garnish with fresh parsley and serve hot.

Notes

  • You can swap in ground turkey or chicken if you want a lighter version.

  • Smoked gouda or pepper jack also makes great alternatives to smoked cheddar.

  • Add chopped jalapeños for a spicy twist.
