Instructions

  • Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and sear for 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.
  • Sauté the Vegetables: In the same skillet, melt the butter over medium heat. Add the diced onion, bell pepper, and minced garlic, sautéing for 3-4 minutes until softened.
  • Cook the Rice: Stir in the long-grain white rice, ensuring it mixes with the vegetables. Pour in the chicken broth, then add thyme and oregano. Bring to a gentle simmer.
  • Smother the Chicken: Return the seared chicken to the skillet, nestling it into the rice mixture. Cover and simmer on low heat for 20-25 minutes until the chicken is cooked through (165°F/74°C).
  • Add the Cream: Stir in the heavy cream and let it simmer for an additional 2-3 minutes until the sauce thickens.
