  • 2 pound boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon lemon pepper seasoning
  • 1 teaspoon paprika
  • 2 tablespoon vegetable oil
  • 4 cup fresh spinach
  • 2 cloves garlic
  • 1 cup half-and-half
  • 1 cup mozzarella cheese
  • 8 ounce mushrooms
  • 6 slices bacon
  • 1 cup Pepper Jack cheese

Instructions

1. Preheat the oven to 375°F and grease a 13×9-inch baking dish with butter.

2. Season the chicken breasts with salt, lemon pepper seasoning, and paprika. Place them in the prepared baking dish, flat side down.

3. In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the fresh spinach, cover, and cook for 1-2 minutes until wilted. Add the minced garlic and half-and-half, bringing the mixture to a boil. Stir in the mozzarella cheese and cook until the cheese has melted and the sauce is creamy.

4. In a separate skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced mushrooms and cook for 1-2 minutes until they’re golden brown.

5. Remove the partially baked chicken from the oven. Top each piece with a generous serving of the creamed spinach, followed by the sautéed mushrooms, chopped bacon, and a slice of Pepper Jack cheese.

6. Return the dish to the oven and bake for an additional 15-20 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly. For an extra-golden finish, you can broil the dish for 2-4 minutes.

Notes

To prevent the chicken from drying out, be sure not to overcook it. Use a meat thermometer to ensure the internal temperature reaches 165°F. Feel free to experiment with different ingredients to suit your taste preferences.
