  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)
  • 1/4 cup reserved apple cider (for topping)
  • 2 tablespoon softened butter (for topping

Instructions

1. Preheat the oven to 350°F and grease and flour a 9×5-inch loaf pan.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice.

3. In a large bowl, beat together the melted butter, granulated sugar, brown sugar, eggs, apple cider, and vanilla extract until smooth.

4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

5. Pour the batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick comes out clean.

6. While the loaf bakes, mix the granulated sugar and cinnamon in a small bowl. In another bowl, combine the reserved apple cider and softened butter.

7. Allow the loaf to cool in the pan for 10 minutes before removing it. Brush the top with the apple cider-butter mixture and sprinkle with the cinnamon sugar topping.

Notes

For a gluten-free version, substitute all-purpose flour with a gluten-free blend. For vegan options, replace eggs with flax or chia eggs and use plant-based butter.
