  • 1 ½ lbs chicken breast, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 12 jalapeños, sliced thin
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

Marinate the Chicken

In a large bowl, combine the olive oil, honey, soy sauce, garlic powder, smoked paprika, salt, and pepper. Add the chicken cubes and toss to coat them evenly in the marinade. Cover the bowl and let the chicken marinate for at least 30 minutes in the refrigerator.

Assemble the Skewers

Once the chicken has marinated, thread the chicken cubes and sliced jalapeños onto the skewers, alternating between the two. Be sure to leave a little space between each piece of chicken to ensure even cooking.

Grill to Perfection

Preheat your grill to medium heat, around 400°F to 450°F. If using wooden skewers, soak them in water for at least 30 minutes before grilling. Place the prepared skewers on the grill and cook for 5-7 minutes per side, or until the chicken is cooked through and the jalapeños are slightly charred.
