Ingredients

Scale
  • 1 tsp finely chopped fresh ginger
  • 3 tbsp gochujang (Korean red pepper paste)
  • 1 tbsp gochugaru (Korean red pepper flakes)
  • 1 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tbsp honey
  • ¼ tsp ground black pepper
  • 1 lb pork belly, sliced thin (2–3 inch pieces, ~1/8-inch thick)
  • 1 small onion, thinly sliced
  • 4 green onions, cut into 2-inch pieces (plus extra for garnish)
  • Toasted sesame seeds (for garnish)

Instructions

1. In a large bowl, mix the gochujang, gochugaru, soy sauce, sesame oil, honey, black pepper, and ginger until smooth.

2. Add the sliced pork belly to the bowl and coat it thoroughly with the marinade. Let the pork belly marinate for at least 20-30 minutes, or even overnight.

3. Heat a large skillet or wok over medium-high heat. Add the marinated pork belly and cook for 5-7 minutes, stirring frequently, until the pork is browned and caramelized to perfection.

4. Toss in the sliced onion and green onions, and continue to stir-fry for another 3-4 minutes until the vegetables are softened and everything is well coated in the flavorful sauce.

5. Remove the Spicy Korean Pork Belly Stir-Fry from the heat and sprinkle with toasted sesame seeds and extra green onions. Serve the dish hot, either on its own or with a side of steamed rice or crisp lettuce wraps.
