  • 1/4 cup Parmesan cheese, grated (plus extra for topping)
  • 1/4 cup mozzarella cheese, shredded
  • 1/4 cup breadcrumbs (plus extra for topping)
  • 2 tbsp chicken broth or white wine (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Pinch of nutmeg (optional)
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

1. Preheat Oven: Preheat your oven to 375°F (190°C). Clean the mushrooms and remove the stems. Drizzle the mushroom caps with olive oil and arrange them on a baking sheet, hollow side up.

2. Sauté Filling: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the onions and sauté for 3-4 minutes until they’re soft. Then, add the garlic and cook for 30 seconds. Stir in the spinach and cook until it’s wilted, about 2-3 minutes. Remove the pan from the heat.

3. Mix Filling: In a bowl, combine the spinach mixture with the shredded chicken, cream cheese, Parmesan, mozzarella, breadcrumbs, broth or wine (if using), salt, pepper, and nutmeg. Mix until the ingredients are well combined and creamy.
