Ingredients
- 2 pound red potatoes, washed and cubed (skins on)
- 1 cup mayonnaise
- 1/2 cup sour cream
- 2 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- 1/2 cup finely chopped red onion
- 6 slices crispy bacon, crumbled
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh parsley
- 1/2 cup chopped dill pickles
- Salt and pepper to taste
Instructions
1. Cook Potatoes: Place cubed red potatoes in a large pot, cover with salted water, and bring to a boil. Cook until fork-tender, about 12–15 minutes. Drain and let cool slightly.
2. Prepare Dressing: In a large bowl, whisk together mayonnaise, sour cream, apple cider vinegar, Dijon mustard, salt, and pepper.
3. Combine Salad: Add cooled potatoes, red onion, pickles, parsley, cheddar cheese, and most of the bacon to the dressing. Toss gently to coat.
4. Chill: Cover and refrigerate for at least 1 hour to let flavors meld.
5. Serve: Garnish with remaining bacon, chives, or green onions before serving.

Optional: You can experiment with different cheeses such as crumbled blue cheese or shredded pepper jack. For a protein-packed version, try tossing in grilled chicken or steak pieces.
